On a happier note, check out the new vegetable recipe that she made up today. Some of the inspiration was from Pintrest, but she substituted all the ingredients for what was in the freezer and fridge.
It was more work than her usual ideas, but so worth it. The peppers are stuffed with quinoa, spinach, corn, black beans, mushrooms, cherry tomatoes, onions, sun dried tomatoes, zucchini and veggie meatballs. The topping is feta cheese. Win-Win-Win all around!! The plan was to eat only one and save the rest for other meals, but then she remembered how tired she was last week teaching Body Combat so she ate two for extra energy. When did Linda become such a good cook? (but still a terrible food photographer...)
Chimi is up in her face begging for a walk but that's not happening until after shes done teaching.
